Asparagus is one of our favorite vegetables. Keep it crisp and bring out all its natural flavors by roasting or pan frying it.
You are going to love this recipe and may even be tempted to lick the dish. We were!
1 bunch fresh asparagus spears, tough ends trimmed
1/8 cup cooking sherry
1/4 cup tamari
3 Tbsp. maple syrup
1 Tbsp. sesame oil
1 Tablespoon sesame seeds
In a small sauce pan heat sherry just to a simmer. Add tamari sauce (or soy sauce), maple syrup, and sesame oil and reduce heat to low. Continue to cook for five minutes stirring occasionally. Remove from heat.
Lay the asparagus in a roasting pan in a single layer and pour half of the sauce over the asparagus. Turn to coat. Bake in a 350° oven for 10 minutes. Remove and turn asparagus once again. Continue to bake for another 8 to 10 minutes, just until asparagus is cooked, but still firm.
Remove the asparagus from the oven, and transfer to a serving dish. Drizzle with the remaining sauce, sprinkle with sesame seeds, and enjoy immediately!
