Vegetable Stir-Fry

2 tablespoons vegetable oil
1 cup broccoli florets
1 red bell pepper, diced
1/2 cup bok choy, diced
1/2 cup baby bella mushrooms, sliced
1/3 cup carrots, julienned (matchstick style)
1/3 cup red onion, chopped
1 - 2 tablespoons hoisen sauce
salt and pepper to taste

For a "meat" and veggie stir-fry, we suggest Gardein Home Style Beefless Tips. Just follow the cooking instructions on the package.

Heat a large wok or nonstick skillet over medium-high heat. Add the vegetable oil. Add the broccoli, bell pepper, bok choy, mushrooms, carrots, and red onion. Cook, stirring continuously until the broccoli is bright green in color and the rest of the vegetables are cooked, but still crisp, about 7 minutes. Stir in the hoisen sauce, and season to taste with salt and pepper. Remove from heat and serve immediately over rice or noodles. We used a white sticky rice for this dish, but you can use any style of rice or noodles you prefer. Serve with tamari or soy sauce on the side.
